True Food Kitchen opens Wednesday at 3994 Hillsboro Pike, located on the first floor of Vertis Green Hills.
The restaurant features a health-conscious, seasonal menu of vegan, vegetarian and gluten-free dishes created with an anti-inflammatory diet in mind.
Between the indoor dining room and patio area, the restaurant seats nearly 300 guests. Once inside, you'll see an open kitchen and eco-friendly materials, such as the hardwood floors and dining chairs made of recycled soda bottles
The restaurant’s bar features pressed juices, organic teas and more, as well as a seasonal lineup of wine, beer and cocktails.
This is the restaurant's ancient grains bowl—roasted yams, snow peas, cilantro pesto, vinaigrette and avocado.
Other dishes include spaghetti squash casserole, organic Tuscan kale salad, grilled fish tacos and a quinoa burger, among others items.
Some of the Nashville location's fall menu items include roasted brussels sprouts, chilled shrimp cups, butternut squash and others.
True Food Kitchen is open 11 a.m. to 10 p.m. Monday–Friday, 10 a.m.-10 p.m. Saturday, 10 a.m. to 9 p.m. Sunday and and weekend brunch 10 a.m.-4 p.m.
